A Catapult - It demonstrates newtons law of motion and the use of a fulcrum to transfer energy.

A model roller coaster - These can be built out of plumbing insulation (the tube kind, you cut them in half then to make a channel) and duct tape. Then a marble is run on the channel. It demonstrates gravity, adn newtons law of motion, and possibly even friction depending on how you set it up.
